TLDR Getting to Know Your Roast:

  • As coffee roasts get darker, the origin flavors of the bean disappear and the bean tastes more like the roast level 
  • As the coffee is roasted, the mouthfeel, or body, of the coffee becomes more pronounced, until after second crack when the body fades.
  • Lighter roasts are more acidic in taste than darker roasts.
  • Light roasted beans are dry and matte, while darker roasts have an oily sheen on the bean surface.
  • The caffeine level decreases as the roast gets darker. Lighter roast coffees are HIGHER in caffeine!
